Allegro is the main restaurant of Bluewater Maribago located at the heart of the resort featuring al fresco poolside patios along with airconditioned seating. It is the only restaurant open 24 hours in Lapu Lapu City and is a favorite for its all-day buffet spread and ala carte menu. Indulge in our twist on classic Filipino and International dishes. Don’t miss the nightly themed dinners, especially the Barrio Fiesta every Saturday night, where guests can enjoy local cuisine and live cultural presentations.

The restaurant has a capacity of 106 persons and is also the venue for Bluewater’s renowned breakfast, lunch, and dinner buffets.

Adobo Fried Rice — Succulent pork belly rendered to perfection in classic adobo sauce combined with fried rice and strips of lechon manok finished with a sprinkle of garlic.

Escabeche Isda — crunchy fried fish paired with our homemade turmeric-tinted sweet and sour sauce that is a harmonious blend of tangy, aromatic spices with just a hint of sweetness.

Sugpusoy (Sugpo – Pugapo – Kasoy) — pan-seared snapper fillet and prawns immersed in a tantalizing sauce made of crab fat, lemongrass and cashew nuts.

Pochero — Slow-cooked beef shank simmered to perfection in a rich flavorful broth paired with corn, bananas, bamboo shoots, and fresh leafy vegetables harvested from our own garden.

Bluewater Halo Halo — Our version of the famous Filipino dessert, Halo-Halo. Churned flavored ice paired with your choice of topping: homemade velvety leche flan and the sweetness of ube kinampay sourced from Panglao, Bohol.
